Homemade Salad Dressing

Balsamic Vinaigrette
1/4 cup balsamic vinegar
1/2 cup extra virgin olive oil
1 clove garlic, minced or crushed
Salt/Pepper to taste
Dijon Vinaigrette
2.5 Tbsp red wine vinegar
1/2 cup extra virgin olive oil
2 tsp dijon mustard
Salt/Pepper to taste

I’ve been using a home-made salad dressing for quite a while now and it is simply wonderful–it is great on any salad!
Just combine equal parts red wine vinegar, olive oil, and lemon juice with salt and pepper to taste. Voila!

Forgot to mention–add a pinch of dried oregano as well. This is just like the dressing that restaurants use on Greek salad :)
