Chili with Caramelized Onion Cornbread

I heart caramelized onions.

I adore the flavor and I especially love the way they make the house smell when they are caramelizing. Its a tossup between caramelizing onions and roasting garlic. Jury is still out on that one.

So I’m teaming up with Formula 409 and their ‘America’s Love Affair with Grease’ campaign…helping home chefs see that a messy meal isn’t worth skipping just to avoid the mess. Splatters from the chili pot, and the skillet that caramelizes the onions…totally worth the mess. Especially when you have a quick way to clean up the splotches left behind on and around the stove.

To kick things off, we’re having a “virtual chili cook-off,” we’ll need you to check out the recipes and decide which one you think sounds best.

    My favorite messy meal is Grilled chicken, greek salad with homemade hummus and pita. It requires a ton of chopping and a lot of dishes to wash

    My favorite messy meal is pan-fried sausage, potatoes and onions. No recipe-just saute the onions while browning the sausage – then add diced potatoes and cook until tender. Season with kosher salt & black pepper-yum!

    Chicken fried pork chops smothered in sausage bacon gravy with caramelized onions on top and don’t forget the mushrooms.

    My favorite messy meal is fried chicken livers with mashed potatoes and gravy. So good, but those little livers sure do splatter when you fry them.

    My favorite “messy meal” is biscuits and gravy. Tastes so good but the stove takes a beating with grease.

    I love chili, and am always looking for new and different recipes. I am going to try yours today as a matter of fact!! Going to Krogers and pick up the ingredients!! Sounds yummy!!

    My favorite messy meal is home made spaghetti and meatballs. You have the grease action from frying the meatballs and the tomato sauce splatters from the simmering sauce!!!

    I would make the Dutch over-less labor intensive and more items my boys won’t question in their food…..

    Anything I cook is messy-it just doesn’t matter. The dog learned early to keep a close watch when I am in the kitchen-things fall randomly. Try as I might, I am just a messy cook and I will have to learn to accept that because I like to cook and I love to eat!

    Yours sounds delish! In fact chili is on the menu this week, going to try yours but we like to eat with tortilla chips or scoops (my kiddos won’t touch onions:)

    Our messiest meal is definitely tacos, especially when serving rice as a side…usually more on the floor than on the plates!

    i can’t stand things that mess up my oven – like baking bacon, or a run-over pot pie. ugh!
