{CLOSED!} Blender Pumpkin Pie Pancakes {And Blender Giveaway!}

by Erin, The $5 Dinner Mom on November 7, 2012

So I don’t make pancake batter in the blender very often. But we love Pumpkin Pancakes, but we don’t love that sometimes they turn out on the dense side. It’s hard to prevent that because pumpkin is really heavy and when you mix it into the batter, it makes the batter heavy.

But I was making a smoothie the other day and wondered if making the pumpkin pancake batter in the blender would aerate it some, so that the pancakes would turn out fluffier. Hmm.

After being mixed, I poured the batter straight onto a hot griddle…

I’ll let you decide for yourself, based on the photo below.

See how fluffy these turned out…I thought they were fluff-ilicious!

Also, I’d love for you to check out the video I created for SmartCookingGuide.com, making fresh fruit smoothies with this blender!

And now for the giveaway, one of you gets one of these!

I like to make mashed potatoes or a quick 5 minute hollindaise sauce in my blender.

I love my blender for many reasons. But my favorite is at Christmas time. I was raised in a Slovak household and each Christmas we make a sour mushroom soup with sauerkraut juice, ground mushrooms and mushroom broth. Yum! We only make it once a year, so it’s a special treat. Those mushrooms need chopping and my blender does a fabulous job. Unfortunately, my blender broke and I won’t have one to do the chopping this year. :(

Actually, my blender gets used most often right now for meal replacement shakes, but when I’m not doing that it gets used most for making red chile sauce – I’m from New Mexico we eat lots of chile!

I love using my blender for Fruit Smoothies: frozen berries and bananas with juice and a little sweetner. Makes a great drink in the evenings when I’m watching TV, and I get my fruit servings in (dairy too if I add greek yogurt for protein).

Lori G November 8, 2012 at 10:47 am

I loved to make tons of things in my blender…smoothies, soups, gravies, but unfortunately when we had company visiting, their baby broke it onto the floor:( Would love to win!
