Spaghetti and Meatballs

Kid Favorite! Spaghetti and Meatballs…

I decided to pop these bad boys into the crockpot with my homemade spaghetti sauce…without checking to see if Crockpot Lady had done them yet. Still haven’t looked…I’m sure she has :) I did a little “GF (gluten free) experiment” using baby rice cereal, instead of bread crumbs…I recommend bread crumbs (if you are not GF)!

Ingredients
3/4 lb ground beef (1/2 pacakge…I used the other half here) ($1.13)
1/2 cup rice cereal ($.10) Use 1/2 cup bread crumbs
1 egg ($.15)
1 t Garlic powder ($.05)
Salt and pepper
Spaghetti noodles ($1) Use rice pasta noodles for GF
2 cups homemade spaghetti sauce ($1)
2 cups Cascadian Farm (CF) Mixed veggies ($.50) I finally caved and ordered 20 CF coupons from ebay! I love CF brand and especially their frozen goodies. They are often on sale, so now I’ve got lots of coupons and can get some great deals!
Homemade Crockpot Applesauce ($.50) Found this yummy treat hidden in the freezer :)

Directions
1. Mix ground meat, egg, spices, rice cereal/bread crumbs in mixing bowl.
2. Form mixture into 1 inch balls. Place in crockpot. Pour spaghetti sauce over meatballs.
3. Cook on high for 4-6 hours.

So this mostly looks like spaghetti sauce, but I promise there are meatballs in there :) Seems the rice cereal experiment worked!

4. Cook rice pasta/pasta noodles as directed on package.
5. Cook frozen vegetables and serve with spaghetti and meatballs!

Looks Great! Don’t know if you saw my tweet earlier, but there is actually a week dedicated to gluten free baking! I found it on a calendar of event stuff….the week of dec. 14th to the 20th. http://www.glutenfreebaking.com Thought you might find the site useful if you didn’t already know about it.

The rice cereal is a brilliant idea. I am not GF but I am wheat free, I just make breadcrumbs out of my leftover stale bread ends.

Glad to know that the rice cereal works! I’ve been wanting to make meatballs, but didn’t want to use my expensive gluten free bread for bread crumbs. Thanks for sharing this idea!
