Chicken and Rice

Ingredients
2 chicken breast, cooked and cubed ($2)
1/2 cup frozen corn kernels ($.25, based on $1 for 2 cups), or fresh corn from 1 ear ($.33)
1 cup white rice ($.20)
1 T butter ($.10)
2 broccoli heads ($1)
1/2 French Loaf Bread ($.50)
Butter/Jelly ($.50)

Directions
1. Cook 1 c rice with 2 1/4 water with butter for 20 minutes (brown rice will take longer).
2. Thaw corn in microwave according to directions on the bag.
3. Once cooked, add chicken and corn and stir through.
4. Steam broccoli heads until slightly tender (3 minutes in microwave, 5 minutes in steamer).
5. Warm bread in toaster oven or oven. Serve warm with butter and jelly.

This was a good meal. I omitted the green veggie along with the bread. I seasoned the chicken with a little chili powder, cumin and garlic powder. Once I mixed everything I added some medium hot salsa. Mixed and dished with a little extra salsa and cheese on top.
