Tzatziki Chicken Salad
A simple, homemade tzatziki dip mixed with shredded chicken tenderloins makes the perfect Tzatziki chicken salad
Servings - 4 servings
Ingredients
- 12 chicken tenderloins
- 1 Tbsp white vinegar
- 1 cup plain Greek yogurt
- 2 Tbsp lemon juice
- 1/2 small cucumber finely choped
- 4 garlic cloves finely chopped
- 2 Tbsp fresh dill chopped
- salt to taste
Instructions
- Bring water to boiling in a large pot. Add the chicken tenderloins and white vinegar to the boiling water and boil for 10 minutes. Once cooked, add the chicken tenderloins to a bowl and shred with fork, or add to stand mixer and shred.
- Place the shredded chicken into the fridge and let cool, before combining with the sauce.
- While the chicken is cooking, prepare the Tzatziki sauce by mixing together the yogurt, lemon juice, chopped cucumber, chopped garlic, chopped dill and salt to taste. Place in the fridge until ready to mix with the chicken.
- Combine the shredded chicken with the Tzatziki sauce. Keep in the fridge up to 5 days.
- Serve Tzatziki Chicken Salad chilled with crackers or on sandwich. Enjoy!
