    Here are a few leftovers recipes that I shared in a local news segment last year…

    This year, I thought I’d share some Thanksgiving leftovers recipes from friends around the blogosphere!

    Thanksgiving Leftover Casserole Thanks Stephanie!

    Easy Turkey Pot Pie Thanks Lynn!

    Turkey and Tortellini Soup Thanks Jessie!

    Slow Cooker Lemon-y Turkey Noodle Soup Thanks Annalisse!

    Pampered Chef’s Turkey and Cranberry Wreath Thanks Mandy!

    Turkey and Wild Rice Soup, Turkey Tetrazinni, Turkey Tortilla Soup, White Turkey Enchiladas – Just substitute shredded turkey in your favorite shredded chicken meal – Thanks Tiffany!

    BBQ Sandwiches – Serve dark meat with BBQ sauce on mini-buns/rolls!  Thanks Laurie!

    Turkey, Lettuce and Tomato Sandwiches Thanks Myra!

    Paninis – Turkey Apple Salad Melt Panini Thanks Kathy!, or try Turkey on Ciabatta with leftover spinach-artichoke dip and some swiss cheese!

      We always make turkey enchiladas. Corn tortillas, homemade enchilada sauce and cheese. I like onions in mine but the children don’t so I usually make some with and some without.

      My favorite is the old standby of Turkey Sandwiches…good bread, lots of mayo, cranberry chutney (or sauce), lettuce (or arugula from garden), lots of pepper.

      A great (non-traditional) sweet potato recipe could be adapted for leftover sweet potatoes if originally served pretty plain:

      5 lbs sweet potatoes
      1 cup coconut milk
      1 tbls red curry paste
      1/4 cup brown sugar
      2 tbls butter

      Cook sweet potatoes and remove from jackets. Mix in other ingredients.

      mashed potatoes and turkey in gravy is our families favorite, but we’ll be adding turkey egg rolls on our menu this week.

      Turkey tacos is our day after tradition. Just chop and shred up the leftover turkey meat to substitute for the ground beef and throw in a packet of taco seasoning for about each pound and cook according to the directions. Serve like regular tacos. Extra mashed potatoes and veggies? We make potato soup and use up any leftover rolls for another dinner. I love taking leftovers and making them into something else. Yum yummy I’m getting excited!
