Strawberries ‘n Cream Rice Pudding – A Sweet, Creamy Twist on a Classic

This Strawberries ‘n Cream Rice Pudding is comfort food meets summertime dessert perfection. Creamy vanilla rice pudding is swirled with fresh strawberries and a hint of whipped cream for a luscious, lightly sweet treat.

It’s cozy enough for cool evenings yet refreshing enough for warm days (if you let it chill in the fridge!) — and every spoonful tastes like nostalgia with a fruity twist

Strawberries n Cream Rice Pudding

A Sweet, Creamy Twist on a Classic
Prep Time5 minutes minutes
Cook Time20 minutes minutes
Servings - 4 servings

Ingredients 

  • 2 cups cooked rice
  • 2 cups milk
  • 1/2 cup sugar
  • 1 tsp vanilla
  • 2 cups chopped strawberries
  • dash cardamom
  • heavy cream or half and half garnish

Instructions

  • In a saucepan, stir together the cooked rice, milk, sugar and vanilla. Bring to bubbling and reduce heat to medium and let cook for 15 to 20 minutes, or until the rice pudding has thickened.
  • Stir in the strawberries and let cook another 5 minutes. Add a dash of cardamom (optional).
  • If preferred, refrigerate to chill the rice pudding and serve the next day.
  • Ladle into serving bowls and add a swirl of heavy cream or half and half. Serve warm or chilled. Enjoy!
