Slow Cooker Beef & Ramen Noodles
Ingredients
- 1 lb. ground beef browned
- 1 bag matchstick carrots
- 1 red bell pepper seeded and thinly sliced
- 2 green onions sliced
- 1 cup beef broth
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1 tsp minced garlic
- 1 tsp minced ginger
- 2 boxes Ramen noodles cooked at the end
- 1 cup water or beef broth
- salt and pepper to taste
- sliced green onions optional garnish
Instructions
- Brown the ground beef before adding to the slow cooker.
- To the slow cooker, add the browned ground beef, matchstick carrots, sliced red bell peppers and green onions.
- Mix together the beef broth, soy sauce, brown sugar, minced garlic, minced ginger and then pour over the beef and veggies into the slow cooker. Stir through and set on low for 6 hours.
- With 3 minutes left in the cooking cycle, nestle the 2 blocks of Ramen noodles into the beef and sauce. Add the additional cup of water or beef broth and spoon the beef, veggies and liquid over the Ramen noodles so they are covered. Let cook another 30 minutes on low. Gently stir the cooked noodles into the sauce.
