Cheap & Delicious: Sheet Pan Sausage with Sweet Potatoes and Apples

This sheet pan sausage with sweet potatoes and apples is the perfect weeknight dinner when you’re watching your budget but still want something delicious and satisfying.
Everything roasts together on one pan, which means minimal prep work and even easier cleanup. Please note that you’ll add the apples towards the end of the roasting!
The combination of savory sausage, caramelized sweet potatoes and red onions, plus tender apples creates a cozy, fall-inspired meal that tastes way more expensive than it actually is.
Sheet Pan Sausage with Sweet Potatoes & Apples

Servings - 4 servings
Ingredients
- 6 pre-cooked sausage links sliced
- 4 medium sweet potatoes peeled and cut into small cubes
- 1 small red onion sliced
- 1/4 cup olive oil
- 1 tsp seasoning salt
- 4 small apples peeled and sliced
- salad or veggies side dish
Instructions
- Preheat oven to 425 F and line a rimmed baking sheet with silicone baking mat.
- Place the cubed sweet potatoes and sliced red onion on the prepared baking sheet. Drizzle the olive oil over the sweet potatoes and red onion and gently toss. Add the sliced sausage in with the sweet potatoes and red onion on the baking sheet.
- Roast in the preheated oven for 30 to 35 minutes. Meanwhile, peel and slice the apples. Add to the sheet pan with everything else and cook for another 10 minutes. Let cool slightly before serving.
- Serve Sheet Pan Sausage with Sweet Potatoes and Apples, as is or with side salad or favorite veggies. Enjoy!
