These Sausage Pancake Muffins are Quite Literally The Most PERFECT BALANCE of Sweet and Savory

Mix your favorite pancake mix with water and maple syrup-y sweetness, with some savory browned sausage and red bell peppers. Add a large pinchful of cheese to the batter, then combine and add to the muffin tins. Bake and enjoy!

Sausage Pancake Muffins

The best sweet-savory muffin that ever existed!
Prep Time10 minutes minutes
Cook Time4 minutes minutes
Servings - 12 muffins

Ingredients 

  • 1 lb. mild ground breakfast sausage
  • 1 tsp minced dried onion
  • 1 small red bell pepper finely chopped
  • 2 cups pancake mix regular or gluten free
  • 1 1/4 cups cool water
  • 1/3 cup maple syrup
  • 1 cup shredded cheese

Instructions

  • Preheat the oven to 400 F. Lightly grease a 12-muffin well pan with non-stick cooking spray.
  • In a skillet, brown the sausage with the onion and chopped bell peppers.
  • In a large mixing bowl, whisk together the pancake mix, water and maple syrup. Once the batter is smooth, fold in the sausage-bell peppers and the shredded cheese. Combine until batter forms.
  • Transfer the batter into the prepared muffin pan.
  • Bake in the preheated oven for 15 to 18 minutes, or until golden brown on top and a fork comes out clean from the middle muffins.
  • Let cool slightly before serving warm, as is or with butter. Enjoy!
