    Raspberry Chipotle Pork Roast

    This recipe is part of our 6th Costco Meal Plan: 20 Slow Cooker Freezer Packs from Costco for $150!

    Our family really enjoys the Raspberry Chipotle sauce that is sold at Costco…we’ve enjoyed with chicken, beef and I think our favorite is this pork roast. It’s a zesty sauce made with raspberries and chipotle peppers and is an outstanding combination of sweet, spicy and smoky!

    Made in the slow cooker, with sweet potatoes and carrots… this a perfect one dish dinner. The boys love carrots and sweet potatoes, and this is pretty much an ‘everyone will clear their plates’ kinda meal. Winner, winner…pork roast for dinner! 😉

    This can be made as a slow cooker pack, where you freezer all the ingredients together and freeze to use later! Because Costco sells their pork roasts in packs of 4. I give you the lowdown in the assembly instructions and videos for this recipe and all the others in the 6th meal plan in the 20 Meals from Costco for $150 series.

    Couple notes:

    • I have heard from some that baby carrots don’t do well after freezing and then slow cooking. {We have not had that problem…so not sure if it’s a slow cooker cooking issue, or a baby carrot brand issue. Or what.} Nonetheless, you can leave the carrots out of the bag and add them into the slow cooker when you make them. Entirely up to you!
    • Gluten Free modifications: None needed, the sauce is GF!
    • Whole30 or Paleo modifications: The sauce does contain sugar if you are on Whole30, so I’d recommend using another sauce or homemade glaze.

    Slow Cooker Raspberry Chipotle Pork Roast with Sweet Potatoes and Carrots

    Sweet with a little hint of spicy!
    Prep Time10 minutes
    Cook Time8 hours
    Servings - 4 servings

    Ingredients 

    • 1 1/2 lb pork roast
    • Salt and pepper
    • 3-4 medium sweet potatoes, peeled and diced
    • 1 lb baby carrots or peeled carrot sticks
    • 1 cup raspberry chipotle sauce

    Instructions

    • Add the pork roast to the base of the slow cooker and sprinkle with salt and pepper.
    • Spread the diced sweet potatoes and carrots around and on top of the pork roast. Drizzle-pour the Raspberry Chipotle sauce over the top.
    • Set slow cooker on low and cook for 8 hours, or high for 6 hours. If cooking from partially frozen, you'll need to cook on low for 8 to 10 hours, depending on how frozen the pack is when you start cooking it.

    Freezer Meal Instructions

    • To pack into gallon size freezer baggie: Label. Then, follow the same directions in the first 2 bullets. Remove as much air as you can and seal. Freeze up to 6 months in your fridge freezer or 12 months in a deep freezer.
    • To thaw, place the bags in the fridge overnight. Or quick thaw in a bowl of warm water.

      I’m confused about a few of these recipes. For the freezer meals, do you just put the uncooked roast into a bag with the other ingredients or is it cooked first?

        Uncooked roast into the bag, freeze, thaw, and then cook. 🙂
