Mediterranean Beef Skillet
Add this quick and easy Mediterranean Beef Skillet Recipe to your next meal plan. This Flavorful One-Pan Dinner is a Weeknight Win!
Servings - 6 servings
Ingredients
- 1 lb. ground beef
- 1 Tbsp minced onion
- 2 tsp minced garlic
- 2 small zucchini diced
- 1 pint grape or cherry tomatoes halved
- 2 Tbsp lemon juice
- 2 tsp dried oregano
- 1 cup sliced kalamata olives
- salt and pepper to taste
- crumbled feta cheese garnish
Instructions
- In a large skillet, brown the ground beef with the minced onion and minced garlic. Drain, if needed.
- Once the beef has browned, add the diced zucchini and halved grape tomatoes with the lemon juice and dried oregano PLUS 1/4 cup hot water and saute for 5 to 7 minutes, or until the veggies begin to soften.
- Stir in the kalamata olives in with the beef and veggies. Season with salt and pepper to taste. When ready to serve, remove from heat and add the feta cheese garnish.
- Serve Mediterranean Beef Skillet recipe with side salad or rice. Enjoy!
