I’ve said it before and I’ll say it again…

I love the way that the Instant Pot infuses flavor into sauces and meals like this one!

This marsala-mushroom sauce is lovely and it’s so simple to cook too. It’s perfect with chicken, and over rice or pasta too!

If you’ve never tried a “Saute to Pressure Cook” type of recipe, this would be a great one to start with! Just read the directions closely 🙂

Instant Pot Chicken Marsala

This marsala-mushroom sauce is lovely and it's so simple to cook too. It's perfect with chicken, and over rice or pasta too!

Cook Time15 minutes minutes
Servings - 4 servings

Ingredients 

  • 2 Tbsp olive oil
  • 4 small boneless, skinless chicken breasts
  • 8 oz. sliced baby bella mushrooms
  • 1 cup chicken stock
  • 1/2 cup marsala cooking wine
  • 1 tsp garlic powder
  • 1 tsp minced dried onion
  • 1 to 2 tsp cornstarch, to thicken
  • Pasta or rice, for side dish
  • Veggies or salad, for side dish

Instructions

  • Heat the olive oil on saute mode of the Instant Pot. Brown both sides of the chicken breasts and toss in the mushrooms and saute for 3 to 4 minutes. Press Cancel.
  • Pour in the chicken stock and marsala cooking white and sprinkle in the garlic powder and minced onion. Close the lid.
  • Set to Sealing.
  • Cook on Manual, High Pressure, for 15 minutes.
  • Let naturally release. Once you open the lid, mix the cornstarch with equal parts water and then stir in the slurry to thicken the sauce. Leave on Keep Warm mode for a few minutes, until sauce thickens.
  • Cook the pasta or rice while it's cooking.
  • Serve Instant Pot Chicken Marsala over pasta or rice, with side salad or veggies.

    This was really good and super easy – even the finicky 9 year old enjoyed it. Just a note that your recipe doesn’t include salt – I added it by salting the chicken breasts on each side while they browned.
