    I have been doing lots of experimenting with pancake batters, and these were just too good not to share 🙂

    These pancakes were D-E-L-I-S-H!

    And with no sugar in the batter!!!

    Enjoy these with some scrambled eggs and fresh fruit for a meal that’s surely under $5!

    Ginger Maple Pancakes

    A delicious batter, grilled to pancake perfection!
    Prep Time5 minutes
    Cook Time20 minutes
    Servings - 4 servings

    Ingredients 

    • 2 cups flour
    • 1 Tbsp baking powder
    • 1 tsp salt
    • 1 tsp cinnamon
    • 3/4 tsp ginger
    • 2 large eggs
    • 1 3/4 cups milk
    • 4 Tbsp maple syrup
    • 4 Tbsp melted butter

    Instructions

    • In mixing bowl, stir together flour, baking powder, salt, cinnamon and ginger.
    • In another small bowl, whisk the eggs, milk and maple syrup. Pour into the dry ingredients and whisk.
    • Melt butter and then whisk into the batter.
    • Make pancakes on griddle.
    • Serve Ginger Maple Pancakes with butter and syrup, with side of fresh fruit or eggs.

      With summer on the way, we go camping almost every weekend and I am always looking for breakfast ideas. I will measure out the dry ingredients in a lidded bowl, then add the milk when it comes time to fry the pancakes. This recipe looks great, I am sure my whole family will love this….thanks so much!!

      Just wanted to say I made a couple batches of these pancakes this weekend while camping and they are great! I pre-made the dry ingredients and placed it in a ziplock bag, then added the wet ingredients when it was time to cook them. Quick and easy….and so tasty, something different from plain pancakes. I also made scrambled eggs on the side, I will be denifinately be doing this again.
