Citrus Cod

Perfectly flaky cod filets are infused with a zesty blend of citrus flavors, making this dish a perfect light and healthy option for any meal. Enjoy!

Servings - 4 servings

Ingredients 

  • 4 4 oz. cod filets
  • Salt and pepper
  • 1 orange
  • 1 lemon
  • 1 lime
  • 4 Tbsp butter
  • Side: salad
  • Side: rice

Instructions

  • Cook rice, as directed.
  • Preheat the oven to 400 F.
  • Slice the orange, lemon and lime.
  • Place the cod filets in a baking dish and season with salt and pepper. Layer 1 orange slice, 1 lemon slice, 1 lime slice onto each cod filet.
  • Bake in the preheated oven for 15 to 20 minutes, or until the cod is no longer translucent in the middle and the fish is white and flaky. Once baked, add 1 Tbsp butter onto each cod filet and let it melt over the top.
  • Prepare the salad.
  • Serve Citrus Cod with a side of rice and salad.

Freezer Meal Instructions

  • Add the cod filets to a baking dish or disposable tray. Sprinkle salt and pepper on the top of each cod filet. Add one slice each of orange, lemon and lime onto each cod filet. Cover with foil or lid.
  • Put the tray in the freezer and freeze for up to 6 months in the fridge freezer or 12 months in a deep freezer.
  • Thaw completely in the fridge overnight, before transferring to the oven and baking as directed. Add butter over each filet after baking. Serve with rice and salad.
