    Breaded Cod

    Perfectly crispy...and a well balanced meal for the whole family!
    Prep Time5 minutes
    Cook Time25 minutes
    Servings - 4 servings

    Ingredients 

    • 4 frozen breaded cod fillets
    • 2 broccoli heads
    • 1/2 cup peas
    • 2 cups rice
    • pudding cups dessert

    Instructions

    • Cook cod per directions on bag.
    • Cook 1 cup rice in 2 1/4 cup water. Add seafood seasoning and 1 T lemon juice for added flavor.
    • Steam broccoli.
    • Serve to hungry family!

      It just so happens that our family had cod, broccoli and mashed potatoes for supper today. I buy breaded lemon pepper cod from Costco (Sam’s club). It is from Jane’s and it’s the best we’ve ever eatten! It doesn’t go on sale that often, but when it does I stock up.

      Also, for kids who don’t like broccoli…put a couple tbsp of butter in a small frying pan on medium heat. Let melt, then add bread crumbs…not to much. Let the bread crumbs brown slightly, usually takes less than a minute, then poor over the broccoli.

      I’m cooking challenged, so I am thrilled to have come across your site–thank goodness for Rachael Ray! …and you of course… =)

      In a well-portioned and nutritious meal like this, breaded fish fillets are a big hit with kids and a time saver for working parents!
