See those pages there?
I’m convinced they are the reason behind the difficulty I am having shaving off these last few postpartum pounds!!!
For the past 3 months I have been slaving away behind the scenes, working on lots and lots of NEW recipes for my next cookbook…The $5 Dinner Mom’s Breakfast and Lunch Cookbook!!!!!
I have been tasting and eating, and tasting and eating. And not running, as much as I’d like to be…because I’m always tasting and eating! Therefore, the pounds are sticking around a little longer than they did after having Ryan and Charlie! But I have no doubt they will melt away as soon as I stop all this extra tasting and eating, and I find more free time to run with the boys once the manuscript is finished. (Run-on sentence much?!)
So my deadline is July 1.
I must turn in the entire manuscript to my editor by then. That I am not worried about. I have 8 of the 9 recipe chapters finished. And my mom is coming for a week in June to care for the boys so I can focus on the content chapters.
But there is another deadline that looms.
TYLER CRAWLING.
He rocks, he scoots, he leans on his arms, he pulls his tummy up during tummy time. It’s really only a matter of weeks…and I’m praying he waits until I’m finished up with the manuscript. Oh please, dear baby. Wait until July 1. Or at least June 30th.
Please.
So with these 2 deadlines hanging, I press on to get this finished up. And then I’m going for a really, really, really long run. (In truth, I am contemplating running a half marathon later in the year.)
And when I get back from that run, I might just have to eat yet another Peanut Butter Filled Chocolate Cupcake. Again. You know, quality control!!!
I’ll be sharing my recipe for Cranberry Apple Muffins later today. Because I promised I would on Facebook.
Oh. And I need some help with my Blackberry Muffins/Cupcakes recipe. I can’t decide which chapter it should go in…the Muffins Chapter…or the Snacks Chapter. So I’ll post it later in the week along with a poll and you guys can decide which chapter to put it in!!! Fun, huh?
So with that, I’m headed back to the kitchen to get this last recipe chapter finished up!!!

Congratulations! I can’t imagine how busy you must be working on your second cookbook in under a year. So exciting!
Congratulations! This is exciting news. I can’t wait to see this one, I absolutely love the first one.
Ooooo breakfast and lunch, that sounds excitingly yummy! I saw you here in San Antonio with my two little girls (Bryleigh 3yrs and Bristol 7mth.) Good luck with Tyler. Bristol was born a little over a month before him and she is up on all fours crawling everywhere. She also has started pulling herself up on everything and is trying to walk. What happened to babies wanting to be babies? : )
You go, girl!!
Call me if you need any help w/the boys or….June should give me some breathing room.
Can’t wait to see this one!
Congrats, that’s awesome that you will have another book coming out! I look forward to seeing the recipes for breakfast/lunch!
Good luck completing your deadlines:-)
wow, amazing. when is the book coming out? I would love to purchase that one!

I am hoping to get my new subscription to cooking like to try it out.
Congratulations!
One of my children eats muffins for breakfast, the other two prefer muffins as snacks, so that is going to be a tough call. I look forward to trying both muffin recipes.
Congratulations…how exciting!
Wow, you have a full plate of life in front of you!! Good job and hope it all goes well with your new cookbook. Baby sounds like he’s getting ready to walk next! We are celebrating our granddaughter’s 2nd birthday. Will post a blog of what happened with her birthday cake. I should have known better, but NO!! Have a great day and have fun putting that cookbook together.
Congratulations, Erin!
I feel like I’m always serving the same things for breakfast and lunch so I can’t wait to try out the new book!
First off I LOVED deadlines when I was working as a reporter. It just got those creative juices flowing. I do understand trying to work and care for young children as I did that for a brief time. Good luck and I KNOW you’ll make your deadline.
Now for the good stuff. I found your web site yesterday and I am amazed how friendly your niche on the web is. I love all the freebies you offer (the menu planner and grocery list come to mind) and I absolutely love your articles. And the photos are amazing!!!
I can’t wait to share your web link with my web friends.
BTW I bought your book at Amazon last week and have already started using your recipes. Can’t wait for the breakfast and lunch book.
Good luck!

Awesome! Good luck finishing it up!
I cannot wait to see the new cookbook! I absolutely love your first one; I have almost cooked my way through it! Good luck with the deadlines and your son!
AWESOME! Can’t wait!
You can always tell someone who has been a mom before. With your first baby, you can’t wait for them to crawl and walk and then with the later ones you don’t want them to hurry!!!
We love playing outside, bbqing and running through the sprinkler!
Oh my goodness! I think I just found my newest favorite blog! Recipes AND coupons!! I love it!! I came across your site trying to figure out what to make this week that would coincide with our local weekly sales and coupons – Menu planning is such a pain to me! But, I think you may have just helped me with a dinner or two (or three or more! hehe) Thanks!
Congratulations on the new book and the baby!
@Cathy D,
Welcome! And thanks!
So, excited for the new book! I think they should be in the Muffin chapter, I think I read or heard somewhere that fruit qualifies as a muffin, instead of a cupcake or snack.
My two cents…

I hate to be the only negative comment, but I recently bought your dinner book. While the recipes sound great, and your frugal tips are great, there is no way that your recipes can be made here in California for $5 or less. My complaint about the book is actually with the inconsistant cost estimates for ingredients. For example, in one recipe the cost of 3/4 pound of ground beef is .76 while in another recipe it list 1/2 pound for .75 and other recipes list the 3/4 pound of ground beef for $1.12. I am going to try a lot of the recipes and post to my blog what the prices for my area are. I hope the editors and proofers look a little closer at your next book.

@Dianna,
Thanks for your feedback Dianna!

As for the different prices, the first book as based largely on recipes from the blog. I paid different prices for the meat each time I made the different meals…as the sale price ranges from $1.29-$1.79/lb…and I often find reduced price packages for as little as $.99/lb.
There will definitely be more price consistencies in the next book.
