Ginger Chicken Stirfry

This turned out really well. I can’t use soy sauce for stirfrys, so I’m always trying new things. I wanted to use an orange, but we were all out. I tried a grapefruit and really liked the grapefruit/ginger flavor combo!

Ingredients
2 large chicken breasts, diced ($2.02)
Juice from 1 grapefruit ($.33)
1 tsp vinegar ($.02)
2 tsp olive oil ($.05)
1/2 tsp ground ginger ($.05)
1 red bell pepper ($1) Price matched!
1 green bell pepper ($.75)
1 cup brown rice ($.30)
2 broccoli heads ($.50) Price matched!

Directions
1. Dice chicken breast into cubes. Marinate at least 30 minutes in 2 tsp olive oil, 1 tsp vinegar, juice from 1/2 grapefruit, and 1/2 tsp ground ginger.
2. Cut green and red peppers into 1/2 inch squares.
3. Pour chicken with marinade juices into a skillet. Add green peppers and juice from other half of the grapefruit. Stirfry on high heat until chicken is cooked through and peppers are tender. Add a few more dashes of ground ginger for some extra flavor! Season with salt and pepper to taste.
4. Cook brown rice according to package instructions.
5. Steam broccoli.
6. Serve chicken and peppers over brown rice with steamed broccoli. Add a salad or eggroll would also go great with this stirfry!

Thanks for this recipe and this blog, it’s really cool! I was wondering if you avoid soy sauce because of the gluten? If so, I found a gluten free soy sauce at a Whole Foods store in our area. Maybe you can find some wherever you are?? :)

Hey girls! Thanks so much for looking into the gluten thing. Boys can’t have gluten, casein or soy. So no soy sauce for us!

If you’re avoiding soy, (and gluten) but can have other things, you might try a peanut ginger flavor with peanut butter, a small amount of vinegar, honey, and salt; or a chili garlic sauce (go light for the kids) which I like to combine with a sweetener as well. Finally, I use fish sauce, although I think that might be an acquired taste.

I have a great alternative to soy sauce! Have you heard of Bragg's? It is 100% gluten free, but made from soy protein. Not sure if your boys can have the soy protein or not. Most people soy intolerant still can. Braggs is a liquid amino spray & very healthy even for those without allergies. You can spray it on anything & also use it in cooking. It's sold at most health food stores as well as regular grocers in the natural section. My kids love it!
