Really…Lasagna for $5??? Yep…it’s possible! I did it tonight…I wish I had ricotta cheese, but I was all out! It tasted delicious without it!
Ingredients
1/2 box lasagna noodles, cooked ($.65)
1/2 jar spaghetti sauce, ($.65)
8 slices provolone cheese, sliced ($1.67)
1/2 cup mozzarella and cheddar cheese, shredded ($.90)
Veggies – BIG squash, eggplant and zucchini (Z – $.79), (S – $1.12), (E – $.79)
(I hit up a local farmer’s market! This is the perfect time of year to take advantage of cheaper than usual fruits and veggies!)
1 c Peas and Carrots ($.50)
Directions
1. Cook lasagna noodles. Slice veggies into long thin pieces to layer in between noodles.
2. Spread a few spoonfuls of sauce on bottom of 9 x 13 glass dish. Place layer of noodles. Place thin veggies on top, sprinkle with a little mozz and place provolone slices on top. Spread more sauce over cheese. (Or layer as you like to!…this is my preference!). Repeat. Place layer of noodles on top and top with cheese.
3. Cook 30 minutes at 325. Serve with peas and carrots or other veggie!
**This 9 x 13 pan will feed our family for 2 meals. Freeze leftovers or use them up within 5 days. Lasagna freezes well!
Cost $7.07 div by 2 = $3.54
It would still have been under $5 for 2 meals if I had used Ricotta Cheese ($1.67)!










cotage cheese works very well in place of ricota, is lower in callories, fat and is on sale often if your keeping meals on a budget.
