Chocolate Chip Raspberry Pancakes – Healthified

Because I was able to get another box of raspberries for $.98 on Monday, leftover from last week’s sale, I had to get these pancakes made and marked off the “Stock the Freezer” list!  As I was making them, I kept thinking to myself…chocolate for breakfast?  Really?

I wasn’t sure how I felt about that.  Don’t get me wrong.  I’m all for chocolate.  But somehow for breakfast, it didn’t seem quite right.

BUT, if I add in some healthy ingredients like ground flaxseed and ground almonds, THEN it will be OK.  Because they’ve been healthified. Right???

I made a quadruple batch of the recipe below.  And most of them made it into the freezer (using this method for freezing pancakes)…as a few were eaten as an afternoon snack.

And I don’t think these need any butter or syrup.  That would just be sugar overload!

The chocolate and raspberry combo is perfect and makes them just sweet enough!

Ingredients
2 cups of pancake mix, store bought or homemade
plus whatever you need to mix in…water, or egg and milk…whatever the box/recipe says!
1 cup raspberries
3/4 cup chocolate chips
3 Tbsp ground flaxseed
1/4 cup ground almonds

Directions
1. Make pancake mix according to box instructions, or make your favorite homemade pancake batter.
2. To the batter, add raspberries, chocolate chips, ground flaxseed, and ground almonds.
3. Flip and enjoy!

Sounds good! I wonder if there is a whole grain pancake recipe out there, which would make us feel less guilty about the chocolate?

I would love to make up a couple of recipes of this and freeze them for my daughters to give their children for quick, healthy breakfasts….as well as for myself.

Use dark chocolate and you won’t feel bad about the choc for breakfast since dark chocolate is full of antioxidants! If you can’t find dk choc chips then just buy a dark choc bar and chop into chunks. These look so good and I’ll def. be trying them (w/dk choc of course)!

You’re right….adding some healthy ingredients does reduce the guilt. And chocolate adds so much to the flavor!

I am SURE this would be a hit at my house. What about white chips? That sounds great. And, I agree, chocolate chips are going over the line for breakfast, but every once in while, it’s a real treat. Great idea!

Great idea to bump up the nutrition of boxed mix pancakes. I really like the way pancakes from a mix taste, but to eat them in the morning (especially when I was nursing a babe) was just not enough to keep me going. I usually make whole wheat pancakes instead. The addition of chocolate chips and raspberries would make my kids sing!
