North Carolina Pulled Pork Sandwiches

A strategic way to use up your leftover pork…and spice up the traditional pulled pork sandwich!  We’ll save the leftover cole slaw for our BBQ this weekend.  I only used a small portion of the slaw on the sandwiches!

Ingredients
1 lb. leftover pork roast ($2)
1 cup BBQ sauce ($.05) Got it nearly free with coupon and sale last week!  Sign up for Kraft foods newsletter for offers, coupons, etc!
1 12 oz bag of cole slaw mix ($2.18/2=$1.09)
1/2 tsp salt
1/2-1 tsp garlic pepper ($.02)
2 Tbsp sugar ($.02)
1 tsp lemon juice ($.05)
1 tsp vinegar ($.02)
1 cup of mayonnaise or Miracle Whip ($.25) Kraft Coupons still available at Coupons.com!!!
4-6 buns ($.60) On sale for $.79 a bag this week at Walmart!
1/4 Watermelon ($.75)

Directions
1. In microwavable bowl, combine leftover shredded pork roast with BBQ sauce. Microwave until hot. Time will depend on how much meat you use!
2. Prepare homemade cole slaw using the cole slaw, salt, garlic powder, sugar, lemon juice, vinegar, mayonnaise or miracle whip.
3. On hamburger buns, add BBQ pulled pork and top with cole slaw.
4. Cut watermelon into slices or diced pieces.
5. Serve North Carolina Pulled Pork Sandwiches with fresh Watermelon.

I was wondering if you have tips for people trying to eliminate high fructose corn syrup from their diets while eating frugally?

I ask because in this recipe alone the mayo and BBQ sauce have it…please help!!! It’s a daunting task.

I used Miracle whip which does not have HFCS. I have tried a BBQ sauce without it, but Kraft does have it. I think it was Montgomery Inn brand??? Just read all the labels or look in the natural/organic section of your store. This recipe didn’t use that much BBQ sauce…just enough to coat the pork.

Oh I can’t believe you posted a pulled pork recipe without my eastern NC expertise!! hahaha!! lol… Actually all we use down here in my part of the state is a sauce made of cider vinegar, salt, cayenne pepper, red pepper flakes, brown sugar, and hot pepper sauce! Don’t tell anybody you used a tomato based barbecue sauce, they’d hurt you! haha!! just kidding! Your pic is great, boy i’d love a sandwich like that for lunch!! ;-)

I work very diligently to keep my budget in check AND keep HFCS out of my family’s diet. I have found the best way to do this is to simply make as many things as I can myself. We now make our own Mayo (just eggs and canola oil, and it only takes a few minutes to whip up) and my husband has started making our BBQ sauce. The added bonus. It all tasts 100% better then anything you could ever buy in a store. Here’s the BBQ sauce recipe:

one up of Jack Daniels, reduced down to 1/4 or 1/8 (or you could use apple juice)

one can of tomato sauce
1/2 cup of ketchup*
1/2 cup of molasses
1/4 cup Worcestershire sauce
1/4 cup Flavored Rice Wine Vinegar
1/3 cup packed Brown Sugar
Salt, Pepper, Garlic powder and Onion powder to taste. So something along the lines of
1 tsp Salt
1 tsp Pepper
1 tbsp Garlic powder
1 tbsp Onion powder

Reduce the Jack down, pour in all the rest of the stuff, let it simmer for about 20 minutes, stirring constantly so it doesn’t burn.

Viola, really good bbq sauce.

*Most Ketchups have HFCS. I have found a wonderful organic one at Trader Joe’s and it is only $1.25 a bottle!

Love this meal–and the photograph!

I bought Montgomery Inn BBQ sauce at Kroger recently. Not only was it cheap, it contained no HFCS.

It’s tough because even if you make your own sauce, chances are that your ingredients still contain HFCS, too.
