Fish with Rice Blend and Broccoli

Ingredients
2 whiting fillets, 2 tilapia fillets ($3.29)
3 tsp lemon juice ($.10)
2 tsp olive oil ($.10)
1/2 tsp dill ($.05)
Salt and pepper
1 cup uncooked rice blend ($.60)
Splash of lemon juice ($.01)
2 large broccoli heads ($.50) I bought these at a grocery store closing sale. Details tomorrow!

Directions
1. In small bowl, whisk lemon juice, olive oil, dill and a few dashes of salt and pepper.
2. Place fish in baking dish or foil. Pour lemon dill sauce over the fish and marinate at least 30 minutes.
3. Bake fish at 350 for 20-25 minutes.
4. Cook rice blend according to package instructions. I like to add a splash of lemon juice to the rice as it’s cooking.
5. Steam broccoli in steamer for 4-5 minutes, until turns bright green.
6. Serve fish with rice and broccoli.

This looks really good. I usually walk right past the fish because I always manage to mess it up somehow, but I think I could handle baking it.
