Cauliflower Casserole

For dinner Monday night, my mother in law joined us for the meal. She had a cauliflower that she wanted me to use in the meal. Cauliflower?!? What do you do with cauliflower?!? I don’t remember the last time I made a dish with cauliflower! If we were having a pototo based meal, I would have just mashed it into the potatoes. But we weren’t, so here’s what I did with it…

Ingredients
1 cauliflower head, broken into small pieces
2 cups cottage cheese
3 T flour or rice flour
1/2 t salt and pepper
1 cup shredded cheese

Directions
1. Cook cauliflower in steamer or microwave.
2. In bowl, mix flour, cottage cheese, S/P. Add cooked cauliflower and mix together.
3. Place mixture in 8×8 baking dish. Sprinkle cheese over top.
4. Bake 20 minutes at 350, until cheese turns golden brown.


Did we like it? SURE DID!

Both of my boys ate it up! They were easily convinced to eat the “white trees”, as we call broccoli, “trees”. Next time I see a good deal on cauliflower, I just might buy one!!!

I never thought to make cauliflower any “other” way, but this does look good!

We always cook/steam it, and the drizzle it with browned margarine and a sprinkle of salt.

Yumm! This looks great! Thanks for stopping by today. I do cook 3 times a day usually. It’s relaxing for me and gets me out of the chaos of my toy covered living room LOL. I just posted a WFMW on how I save time cooking. A meal can look like it takes forever but it really doesn’t :)

We love Cauliflower! Cauliflower soup is one of our favorite soups to have! I just made a chicken a rice soup the other day with broccoli and cauliflower in it, it was so good!

My favorite cauliflower recipe.

Frosted Cauliflower

Cook cauliflower — easiest in the microwave in micro safe bowl with a lid — no plastic please

S & P to taste
Frost with mayo
Top with cheese

Microwave for 1 minute to melt cheese.

So yummy.

I’m not a cauliflower fan, but I’m going to try this. I do like cauliflower soup (ours is pureed and is nice and creamy–maybe I’ll post that one soon)

How funny, my boys call broccoli “trees” too! I believe that cauliflower would turn into trees with snow…lol :)

Thanks for all your ideas everyone! Maybe we’ll try more cauliflower recipes whenever it goes on sale next!
I did not include a price breakdown for this dish. It was not part of our original dinner! My mother in law gently insisted that I use it, as she wouldn’t be able to. I happened to have cottage cheese and cheese that were both on sale this week, so Voila! If I had to guess, the dish would have been $2.50 – $3. Since I don’t buy cauliflower, I have NO idea how much it costs!

I tried it last weekend and my boyfriend and I loooved it! Obviously, a whole head (do you say so?) was too much for the two of us, so I keep eating it at work – along with potatoes, it’s terrific! Thanks so much for the recipe!

An excellent way to serve cauliflower is to drizzle some olive oil on, salt and pepper, garlic powder and whatever other seasonings you like (boyfriend likes chili powder for a “kick”) and just stick it in the oven until it’s crispy. It’s almost better than french fries!

I know I’m commenting long after you posted this, but I wanted you to know that I tried this and my entire family LOVED it! I could have eaten it for days! I just wish cauliflower was on sale more often. I’m wondering if it would be as good with frozen cauliflower? I think I’m going to have to find out!

You can also take cauliflower, boil it in water or chicken broth (save broth for another meal), drain broth add desired salt & pepper and mix with blender and get mashed potaoes. This comes from south beach diet.
