1 16 oz box Ziti, cooked ($1.25)
1/2 spaghetti squash, cut in half ($1.79)
4 T butter ($.25)
6 T flour ($.10)
2-3 cups milk ($.30)
S/P
1 cup mozz cheese, shredded ($.99)
1/2 cup lima beans ($.25) (for some color!)
Directions
1. Put halved spaghetti sqaush upside down in 9×13 baking dish with 1/4″ water. Bake 45-60 minutes at 350. When done, flip over, scoop out seeds and scrape squash out onto plates. We ate it tonight with a sprinkle of cinnamon and butter. It gave it a nice fall flavor!
2. Make white sauce…melt butter, whisk in flour, S/P. Mix into a paste. While wisking, add in milk. Sauce will be very liquidy at first. It will thicken as it warms and cooks through. Whisk in more milk to thin out or more flour to thicken. One at desired consistency, add cooked and drained pasta. Transfer to 9×13 pan. Sprinkle cheese over the top. Bake 15 minutes at 350 until cheese begins to golden.
2. Microwave lima beans. Serve all together.

I like this recipe and tried it two nights ago when I first found your blog… in my family we’re not as big of fans of cream sauces so I did a combination of the traditional tomato sauce, mixing the ziti all up in that, and then pouring the creamy sauce over the top of the tomato ziti. It came out WAY more moist than my baked ziti normally does. Thanks for the recipe!!

Thanks for the recipe! We also added hamburger with onion, garlic, and italian seasoning, which was very yummy!

We loved this…. added a dash of grated nutmeg to the sauce. Also added about 1 lb. of seasoned ground beef (used onion & garlic powder, s/p, italian seasoning, and once browned added 8 oz. tomato sauce then drained. Put white sauce with noodles, then added beef – mixed and put in casserole dish and topped with cheeses – mozzarella blended with parmesan romano (few Tbsp) and 2 tsp italian seasoning. Was so delicious. Only added about 2.50 to the cost and stretches the meal to serve more or for left overs. Such delicious flavor…Thanks for the inspiration.
