The best way to use up leftover rice!

- 2 cups leftover brown rice
- 2 cups black and red beans, cooked
- 1 cup homemade or store bought salsa
- 1/2 cup shredded cheddar cheese
- 8 soft taco size flour tortillas or tortilla chips
- 1 avocado, optional
Mix leftover rice and beans in a saucepan on the stovetop with salsa. Heat thoroughly.
Top with cheese and roll up into tortillas or with tortilla chips.
Top with diced avocado if desired.
