Because this recipe is a Mediterranean twist on tomato sauce and is served over rice.

- 28 oz, can diced tomatoes
- 2 cups cooked white beans or 2 - 15 oz. cans white beans
- 1 Tbsp dried dill
- 1 Tbsp olive oil plus extra for serving
- Salt, red pepper, and black pepper, to taste
- Cooked rice for serving
Halve the grape tomatoes or open the canned tomatoes.
Pour 1 Tablespoon of olive oil in a pan. Turn stove on medium-low.
Add tomatoes, beans and dill.
Add salt and peppers to taste. Think: enough of each pepper to add flavor without too much heat.
Cook until the tomatoes soften and release their juices, about 40 minutes.
Ladleover cooked rice.
Drizzle with a generous amount of good olive oil.
