Ingredients
1red bell pepperseeded and chopped
1orange bell pepperseeded and chopped
1smallwhite oniponchopped
215 oz.cans black beansdrained and rinsed
2cupswhite rice
16oz.jar yellow curry sauce
115 oz. can coconut milk
1cupvegetarian or chicken broth
1/4cuplime juice
1tspminced garlic
1Tbspcurry powder
Salt and pepper to taste
Instructions
In a large saucepan or Dutch oven, saute the chopped bell peppers and onion in 1 Tbsp oil. Once translucent, stir in the black beans and white rice (uncooked).
Quickly stir in the curry sauce, coconut milk, and broth. Stir in the lime juice. minced garlic, and curry powder next. Whisk together and cover with lid. Bring to bubbling, then reduce heat to medium low and simmer for 20 minutes to allow rice to cook. Turn off the heat once the rice is tender. Season with salt and pepper to taste.
Serve Rice and Beans Yellow Curry as a one dish dinner, or with your favorite side salad or veggies.
