Homemade Red Enchilada Sauce

Use this homemade red enchilada sauce to make beef, chicken, cheese or shrimp enchiladas.

Ingredients 

  • 2 cups chicken or vegetable broth
  • 12 oz can tomato paste
  • 2 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder or 1 Tbsp minced onion
  • 1 tsp salt and pepper each

Instructions

  • In a medium saucepan, whisk together the broth, tomato paste, ground cumin, garlic powder, onion powder or minced onion and salt and pepper. Bring to bubbling, then reduce heat and let simmer for 10 to 15 minutes. Then turn off the heat to keep it from thickening too much.
  • Use the homemade red enchilada sauce to make your favorite enchiladas.
