Freezer Friendly Blackened Salmon Sandwich

This amazing blackened salmon sandwich is delicious and flavorful with the highlight being a filet of salmon coated in a spicy seasoning blend and cooked to perfection in melted butter. Prepare the salmon filets for the freezer and you have a wonderful future dinner waiting for you!

Ingredients 

Ingredients for Single Meal

  • 4 - 4 oz. salmon filet
  • 1 Tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 4 Tbsp butter
  • 4 ciabatta rolls
  • Garnish: cucumber slices
  • Garnish: ranch dressing mix
  • Side: salad

Instructions

Cooking Directions for Single Meal

  • In a small mixing bowl, combine the Cajun seasoning, smoked paprika, garlic powder and onion power.
  • If needed, remove the skin from the salmon. Sprinkle onto the salmon filets, generously, and press into the salmon.
  • In a large skillet, melt the butter and then saute the salmon, seasoning side down for 3 to 4 minutes per side, or until cooked through. Once cooked, set aside and assemble sandwiches.
  • Slice and toast the ciabatta rolls, then add Ranch dressing, the blackened salmon filet, and sliced cucumber to each sandwich.
  • Serve Blackened Salmon Sandwich with side salad.

Freezeasy Meal Prep Directions

  • In a small mixing bowl, combine the 2 Tbsp Cajun seasoning, 2 tsp smoked paprika, 2 tsp garlic powder and 2 tsp onion powder.
  • To each gallon-size plastic freezer baggie, add the following ingredients:
  • 4 - 4 oz. salmon filets
  • Half of the seasoning blend sprinkled onto the salmon
  • Do NOT freeze the butter.
  • Remove as much air as possible and seal. Add label to baggie and freeze.

Freeze & Thaw Instructions

  • Put baggie in the freezer and freeze up to 6 months in fridge freezer or 12 months in a deep freezer. Thaw the salmon and seasoning completely before sauteing in the melted butter.

  • Thaw completely and saute in melted butter for 8-10 minutes, or until cooked through. Assemble into sandwiches with ciabatta rolls, ranch dressing, and sliced cucumbers. Serve with side salad.
