1/2cupcanola oil
1 1/2cupsmilk
1tspvanilla
2cupsquick cooking oatscertified gluten free, if needed
1cuprolled oatscertified gluten free, if needed
1/2cupall-purpose flouror gluten-free blend
1/2cupbrown sugar
1scoopprotein powderoptional
2tspbaking powder
1tspsalt
2cupsfresh bluberries
1largelemonjuiced and zested
Instructions
Preheat the oven to 350. Spray a 9x13 baking dish.
In a mixing bowl, whisk together the eggs, oil, milk, quick cooking oats, rolled oats, flour, brown sugar, optional protein powder, baking powder and salt. Stir until batter forms. Stir in the fresh blueberries, lemon zest and lemon juice.
Pour the batter into the prepared baking dish.
Bake in the preheated oven for 25 to 30 minutes, or until toothpick comes out clean in the middle.
Serve Mango Raspberry Baked Oatmeal with milk, cream, or yogurt.
