Apple Cinnamon Baked Oatmeal

Ingredients 

  • 3 small apples cored, peeled and diced
  • 2 Tbsp brown sugar
  • 1 Tbsp cinnamon divided
  • 1 tsp lemon juice
  • 2 cups quick cooking oats
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1 tsp ground ginger
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 2 cups milk
  • 1/2 cup canola oil
  • 1 tsp vanilla extract

Instructions

  • Preheat the oven to 350 F. Lightly grease a 9x13 inch glass baking dish with non-stick cooking spray.
  • Place the diced apples into a bowl of water with the lemon juice. Let soak for 5 minutes, then strain and toss with 1 tsp cinnamon and 2 Tbsp brown sugar - lightly coating the apple pieces.
  • In a mixing bowl or stand mixer, whisk together the milk, eggs, oil and vanilla. Then stir in the quick cooking oats, rolled oats, other brown sugar, flour, the remaining 2 tsp cinnamon, ginger, baking powder and salt. Stir until loose batter forms. Gently fold in the coated, diced apple pieces and pour into the prepared baking dish.
  • Bake in the preheated oven for 30 to 35 minutes, or until set in the middle.
  • Serve Apple Cinnamon Baked Oatmeal with milk or cream.
