Hearty Ham Breakfast Scramble

Perfect to use with leftover ham!

Ingredients 

  • 1/4 cup Dairy Free Margarine
  • 1/2 cup onion diced
  • 1-2 cloves garlic minced
  • 1 cup button mushrooms chopped
  • 1 cup chopped ham
  • 8 eggs
  • salt & pepper to taste
  • 2 green onions for garnish

Instructions

  • Saute onions, garlic, and mushrooms in dairy free margarine until the onions are tender and the mushrooms are golden brown around the edges.
  • Add ham and warm it through.
  • While you’re warming the ham, whisk up the eggs and spices in a large bowl.
  • Add in the egg mixture and scramble until the eggs are completely cooked.
  • Serve warm and garnish with sliced green onion or chives!
