Place the pork roast in slow cooker with 1 tsp apple cider vinegar, minced onion, garlic powder. Set on low and cook for 8 hours.
(Important Note: if your slow cooker runs hot, add about 1/2 cup water to the base of your slow cooker.)
About 20 minutes, before serving time, add the diced apples, 1/4 cup apple cider vinegar, dried cranberries, minced onion, ground ginger to small saucepan and bring to bubbling. Reduce heat and simmer for 15 minutes, or until serving time.
Slice or shred the pork roast and serve with hefty spoonful of apple relish on top.
