Cilantro Lime Chicken Tacos

Cilantro Lime Chicken Tacos are a quick and easy meal to prep! Makes a fresh and simple lunch or dinner - perfect for your next Taco Tuesday!

Ingredients 

  • 1 1/2 lb. boneless skinless chicken breast cut into small cubes
  • 1 tsp sugar
  • 1/2 lime juiced about 1 tsp
  • 1/8 cup red wine vinegar
  • 2 cloves garlic minced
  • 2 green onions chopped
  • 1/2 tsp salt
  • 1 tsp fresh cilantro chopped
  • 1/2 tsp ground black pepper
  • 10 flour tortillas 6 inch, street taco size
  • 1/4 cup shredded lettuce
  • 1 tomato diced
  • 1/4 cup salsa
  • 1/4 cup shredded Monterey Jack cheese

Instructions

  • Using a medium sized skillet, add chicken and sauté over medium- high heat about 15 minutes or until golden brown.
  • Add in lime juice, sugar, red wine vinegar, minced garlic, cilantro and green onions. Sprinkle with salt, and pepper while cooking. Reduce heat and allow to simmer until chicken has absorbed wet ingredients.
  • Warm tortillas in a small skillet flipping on each side or place in a warm oven for a few minutes.
  • Each taco will use 1/10th of the meat mixture. Fill each tortilla with chicken and add in lettuce, tomatoes, cheese and top with salsa if desired.
