Crust
- 2 cups flour
- 3/4 cup powdered sugar
- 1 cup butter
Filling
- 4 eggs
- 2 cups sugar
- 1/2 cup flour
- 1/2 tsp salt
- 4 cups rhubarb diced
Crust Instructions
Combine flour and sugar. Cut in butter until crumbs form.
Press into 15x10 pan.
Bake in 350 oven for about 15 minutes.
While crust is baking, prepare filling.
Filling Instructions
Blend eggs, sugar, flour and salt until smooth.
Fold in the rhubarb.
Spread over hot crust and bake in 350 oven for 35-40 minutes, or until filling is lightly browned.
Cut into bars when cool.
