Your basic taco, with a little added green!
Servings - 4 servings
- 1 lb. ground beef
- 2 medium zucchini, diced
- 1 white onion, chopped
- 1 packet Taco Seasoning
- Salt and pepper, to taste
- 12 hard taco shells
- 1 large tomato, diced
- 1 cup chopped iceberg lettuce
- 1 cup shredded cheddar cheese
- 1 avocado, sliced
- Fresh fruit, as side dish
Brown ground beef with diced zucchini and chopped onion. Drain and return to pan. Add taco seasoning, salt and pepper, and let saute for 3-4 minutes to let the flavors infuse.
Prepare taco fixinschop lettuce, dice tomato, set out shredded cheese, and slice avocado.
Prepare fresh fruit.
Assemble tacos. (You can also heat the taco shells up if desired by following the directions on the package.)
Serve Beef and Zucchini Tacos with a side of fresh fruit.
