Once the chicken is cooked, place onto quesadilla and top with cheese and chopped cilantro. Place another tortilla on top. Repeat until all 4 quesadillas are made. Place back onto the grill over indirect heat and cook for 2-3 minutes, and then carefully flip. (I usually use 2 large spatulas, or even a spatula and small plate, to flip without spilling.) Grill another 2 minutes until cheese is fully melted.
