Black Bean and Cheese Tacos

My youngest son would eat these for lunch everyday....yum!

Servings - 4 servings


  • 15 oz. can black beans drained
  • 1/2 cup salsa
  • 1/2 cup shredded Mexican blend cheese
  • 4 burrito size whole wheat tortillas


  • Mash the black beans in a mixing bowl, then add the salsa. Combine until smooth-ish.
  • Spread evenly onto the tortillas and top with shredded cheese.
  • Microwave for 1-2 minutes, or until cheese has melted to your liking.
  • Serve.
