A homemade blend to substitute 1:1 for gluten free baking.

- 2 cups rice flour
- 2/3 cup potato starch NOT potato flour!
- 1/3 cup tapioca flour
- 1 1/4 tsp xanthan gum
Combine all ingredients in large bowl and stir.
Sift the ingredients together and store in a container with a tight fitting lid.
Sift the mixture before using as indicated in recipe that calls for GF baking mix.
