Slow Cooker Ride 'Em Cowboy Beef

This is the perfect 'clear out the pantry' meal...and the perfect 'I'm rushing out the door and don't have time to make dinner' meal. Enjoy!

Ingredients 

  • 2 lbs. beef chuck roast
  • 1 Tbsp ground cumin
  • Salt and pepper
  • 2 - 15 oz. cans pinto beans, drained
  • 15 oz. can corn drained
  • 10 oz. can diced tomatoes with green chilies drained
  • Salad, Rice or Bread Side Dish

Instructions

  • Add the beef roast to the base of the slow cooker. Add the ground cumin over top of the beef roast. Sprinkle with a little salt and pepper as well.
  • Add the beans, corn and diced tomatoes with green chilies over the top as well. Cook on low for 8 hours.
  • Shred the beef and mix with the corn-bean mixture. Serve as is, or within a taco.
  • Prepare other side dishes.
