Peanut Butter Chocolate Chip Baked Oatmeal

Kid approved. Super filling. Kind of like cake, without all the extra sweetness!

Ingredients 

  • 3 cups quick cooking oats
  • 2/3 cup brown sugar
  • 1/4 cup flour
  • 1 tsp ground ginger
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • 1 1/2 cups milk
  • 3 tbsp canola or vegetable oil
  • 1 tsp vanilla(or use homemade vanilla extract!)
  • 1/2 cup peanut butter
  • 1 cup mini-chocolate chips

Instructions

  • Preheat oven to 350. Lightly grease a 913 inch baking dish with non-stick cooking spray.
  • In a stand mixer or large mixing bowl, combine the oats, brown sugar, flour, ground ginger, baking powder and salt.
  • Beat in the eggs, milk, oil, vanilla, peanut butter until smooth and aloose batter forms. (It will seem runny, thats OK...the oats will soak up all the liquid as it cooks and the end result will be 'cake-like oatmeal'!)
  • Fold in the chocolate chips.
  • Pour batter into the greased baking dish and bake in the preheated oven for 30 to 35 minutes, or until cooked through in the center of the baking dish.
  • Let cool slightly before serving.
  • Serve Peanut Butter Chocolate Chip Baked Oatmeal with milk, yogurt, Greek yogurt, or as is.
