Slow Cooker Chicken & Spinach Stroganoff (including Keto version!)

Creamy and hearty chicken version of stroganoff!

Ingredients 

  • 4 small boneless chicken breasts
  • 10 oz bag frozen chopped spinach
  • 1 Tbsp minced onion
  • 1 tsp garlic powder
  • 1 cup chicken broth
  • 1 tsp paprika
  • 10 oz can cream of mushroom
  • Salt and pepper
  • 1 cup sour cream*
  • Side: egg noodles
  • Side: veggies

Instructions

  • To the slow cooker insert, add the chicken breasts, frozen chopped spinach, minced onion, garlic powder, chicken broth, paprika, cream of mushroom soup, salt and pepper. *Do not add the sour cream at the start of slow cooking.
  • Set the slow cooker on low and cook for 8 hours. Just before serving, stir in 1 cup sour cream into the chicken mixture.
  • Cook the egg noodles or other pasta, as directed.
  • Prepare veggies.
  • Serve Slow Cooker Chicken & Spinach Stroganoff over egg noodles with veggies.
