Wrap each chicken breast with a slice of bacon and place into the slow cooker insert.
In a small mixing bowl, whisk together the maple syrup, Dijon mustard, vinegar, minced onion and minced garlic. Pour over the top of the wrapped chicken breasts. Set on low and cook for 8 hours.
Warm the dinner rolls.
Prepare the salad.
