Beef and Zucchini Tacos

Your basic taco, with a little added green!

Servings - 4 servings

Ingredients 

  • 1 lb. ground beef
  • 2 medium zucchini, diced
  • 1 white onion, chopped
  • 1 packet Taco Seasoning
  • Salt and pepper, to taste
  • 12 hard taco shells
  • 1 large tomato, diced
  • 1 cup chopped iceberg lettuce
  • 1 cup shredded cheddar cheese
  • 1 avocado, sliced
  • Fresh fruit, as side dish

Instructions

  • Brown ground beef with diced zucchini and chopped onion. Drain and return to pan. Add taco seasoning, salt and pepper, and let saute for 3-4 minutes to let the flavors infuse.
  • Prepare taco fixinschop lettuce, dice tomato, set out shredded cheese, and slice avocado.
  • Prepare fresh fruit.
  • Assemble tacos. (You can also heat the taco shells up if desired by following the directions on the package.)
  • Serve Beef and Zucchini Tacos with a side of fresh fruit.
