Alea's One Pot Chicken Dinner

Servings - 4 persons

Ingredients 

  • splash of olive oil
  • 1 1 1/2 pounds chicken, cut into 3 - 4 ounce pieces
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 pound red potatoes, halved or quartered if large
  • 1 pound carrots, cut into 1 inch long pieces
  • 4 stalks celery, cut into 1 inch pieces
  • 1 cup chicken broth
  • 2 teaspoons thyme
  • 2 teaspoons oregano
  • 1 teaspoon basil
  • 1 tablespoon parsley
  • dash of salt and pepper
  • 2 teaspoons cornstarch

Instructions

  • Brush the bottom of a large pot with olive oil. Add chicken and cook over a medium-high heat until both sides are golden brown about 8 - 10 minutes. Remove chicken from the pot ( I put the chicken pieceson the lid because it means 1 less dish to wash later).
