Bean and Cheese Sandwiches

Molletes are traditional Mexican sandwiches, and my spicy version is the perfect way to celebrate Cinco de Mayo with a little kick!

Servings - 4 servings

Ingredients 

  • 4 bolillo rolls, or ciabatta bread
  • 15 oz. can refried beans
  • 2 jalapenos seeded and sliced
  • 1 cup shredded Monterey Jack or Mexican blend cheese
  • 1 cup salsa

Instructions

  • Slice the bolillo rolls open lengthwise.
  • In a mixing bowl, stir the refried beans, and then spread onto the bottom slice of the bolillo roll.
  • Top with a few jalapeno slices and shredded cheese.
  • Broil for three to five minutes or until cheese is melted and begins to turn golden brown.
  • Sprinkle with salsa and top with the other slice of bread.
