Molletes are traditional Mexican sandwiches, and my spicy version is the perfect way to celebrate Cinco de Mayo with a little kick!

- 4 bolillo rolls, or ciabatta bread
- 15 oz. can refried beans
- 2 jalapenos seeded and sliced
- 1 cup shredded Monterey Jack or Mexican blend cheese
- 1 cup salsa
Slice the bolillo rolls open lengthwise.
In a mixing bowl, stir the refried beans, and then spread onto the bottom slice of the bolillo roll.
Top with a few jalapeno slices and shredded cheese.
Broil for three to five minutes or until cheese is melted and begins to turn golden brown.
Sprinkle with salsa and top with the other slice of bread.
