Peel the sweet potatoes or scrub them well if you prefer to leave the skins on.
Cut the sweet potatoes into French fry size wedges.
Combine the remaining ingredients in a large bowl then toss the sweet potatoes in the oil mixture until coated.
Arrange on a shallow cooking sheet and bake in a preheated oven at 400 degreesfor 35 to 40 minutes. Remove and shake or stir half way through.
