- 1 Tbsp vegetable oil
- 1 onion, chopped
- 3 cloves garlic, chopped
- 2 chunks ginger (about a tablespoon size), 1 tbsp chopped, 1 tbsp grated
- 1 1/2 lbs carrots, peeled and sliced
- 6 cups chicken stock
- 14 oz evaporated milk (optional)
- salt and pepper
3 tbsp butter, softened
3 cloves, garlic, minced fine
1 teaspoon ginger, grated fine
1/2 loaf of French bread, sliced
