Ingredients
1/4cuplime juice
1 1/2cupsdry brown rice
2Tbspminced onion
1smallgreen or red bell pepperseeded and diced
2cupsfrozen cornor 15 oz. can corn, drained
15oz.can tomato sauce
1tspground cumin
1tspchili powder
Salt and pepper to taste
frozen broccoli or green beansside dish
Instructions
In a large saucepan, bring 3 1/2 cups of water plus the lime juice to a boil. Add the brown rice and minced onion. Return to boil, reduce heat to medium, cover and let cook for 45 to 50 minutes, or until brown rice is tender.
Once the rice has cooked, mix in the diced red/green pepper, corn, tomato sauce, cumin and chili powder. Let simmer over low heat for 5-10 minutes. Season with salt and pepper to taste.
